Pan Divino is a modern Italian restaurant in Surry Hills, guided by Chef Mondonico’s ‘less is more’ philosophy and a deep respect for traditional Italian cooking. Earthy elements like flame, smoke and salt are used to shape dishes that feel honest, restrained and memorable.
With a strong focus on seafood, the seasonal menu showcases ingredient-led plates such as the signature salted blue-eye trevalla, cured and dry-aged in house, alongside handmade pasta and wood-fired dishes designed to be shared.

Our Head Chef, Adam Bryce
Adam Bryce began his culinary career 15 years ago as an apprentice on Crown Street, quickly developing a passion for Italian cuisine. After honing his skills at Jamie Oliver’s Italian and Otto, his love of seafood led him to North Bondi Fish, where he met Stefano and formed a lasting friendship, later becoming Head Chef. He went on to lead the kitchen at the iconic Doyle’s Seafood Restaurant before reuniting with Stefano at Pan Divino, where his expertise in Italian flavours and fresh seafood comes together on every plate.
